I just realized I never reviewed and shelved two out of the three fantastic SkinnyTaste cookbooks I own. Purchased in 2017 and read the same year and have been using the books ever since. Love them all!

I just borrowed this from the library and read through all of the recipes. There are so many that I would like to try that I've decided to buy the book for my library. I love that she adds nutritional information for each recipe. The recipes look delicious and I love that she includes whole grains, almond milk, egg whites, etc. The recipes are healthier and the ingredients are accessible. I may come back after making some of the recipes to adjust my review/rating, but if they are as yummy as I just borrowed this from the library and read through all of the recipes. There are so many that I would like to try that I've decided to buy the book for my library. I love that she adds nutritional information for each recipe. The recipes look delicious and I love that she includes whole grains, almond milk, egg whites, etc. The recipes are healthier and the ingredients are accessible. I was introduced to Gina Homolka and her Skinnytaste Blog by a friend several years ago and I have been following the blog ever since. When The Skinnytaste Cookbook was announced, I was cautiously excited. Sadly, a lot of the food blogs I follow put out cookbooks around the same time so I lost track of this one.

I was introduced to Gina Homolka and her Skinnytaste Blog by a friend several years ago and I have been following the blog ever since. When The Skinnytaste Cookbook was announced, I was cautiously excited. Sadly, a lot of the food blogs I follow put out cookbooks around the same time so I lost track of this one.

Fast forward some time and I'm once again trying to control my diet. I'd started using some of the recipes on the Skinnytaste blog but rarely. Then I decided to borrow a copy from the library and I loved it. The Skinnytaste Cookbook reminds me of the old school cookbooks I used to get years ago: stuffed to the brim with both photos and recipes. And thank goodness Gina Homolka didn't feel the need to cram pages and pages of her preaching at me - she got right to the good stuff.


From The Skinnytaste Cookbook:
Make Ahead Western Omelet "Muffins" - pg 29
These are just ok. I can't rave about them but they are easy to make, to use substitutions with and easy to pack/carry. I made my "muffins" with no meat but I added a couple of slices of portobello mushrooms and paired the muffins with homemade beef sausage. I did attempt freezing these "muffins" to grab and go as suggested. Either I did something wrong wrapping the omelet muffins or this is just a bad idea. The omelet muffins were really...juicy when defrosted and full of ice crystals when frozen. I only kept them in the freezer for a week.

Normally I have non-fat vanilla Greek yogurt with mixed berries (strawberries, blueberries, black berries and raspberries) for breakfast(23g of protein) so I decided to try this to see if it was worth the work switching out to a hot breakfast. Mostly? No.

Naked Persian Turkey Burgers (served with Persian Salad) - pg 156
On first bite, these Turkey Burgers were in desperate need of more: more salt, more flavor. It wasn't until the second bite that the flavors hit me. The Naked Persian Turkey Burgers have a rather different flavor profile but it was tasty enough. I did want to add more salt (I didn't) but I feel a lack of salt. In defense of The Skinnytaste Cookbook, I really like salt. The zucchini in the burgers kept them so moist I was shocked. I tried using zucchini in a regular burger and it worked so well! And you couldn't taste the zucchini at all.

I made the Naked Burgers and the Persian salad to take for lunch and it was moderately filling. No matter how I contorted, I was still very hungry by the end of the work day. If I make this again, I will have to eat it with something a little more filling.

Buttermilk Oven "Fried" Chicken - pg 151
So. This tasted fine (if a little buttery) BUT I will not make this again. There are just too many steps considering the outcome. I found that flipping the chicken was the worst part of the cooking process: I lost a lot of the "breading" at that time. While this is lower calorie than traditional fried chicken, I'd rather just eat traditionally fried chicken as a treat/special occasion instead of making this.

Mongolian Beef and Broccoli - pg 190
This is tasty! Very tasty! I put in a little too much brown sugar so it's a bit sweeter than it should be - but it's still amazingly delicious. This one is a major hit with Hubby. I served this alone and with rice. Love it both ways!

Slow-Cooker Picadillo - pg 193
So easy but delicious! I spent a lot of time tasting this as it was cooking...with a lot of burning of the tongue, lol. I'm really enjoying these ground beef recipes for lunch. I tried it with rice (basmati) which was fine. BUT then I used it as taco meat in a very simple (and light) taco: soft shell tortilla, .25 oz cheddar jack, some diced mini heirloom tomatoes and diced red onion. OMG. OMG! YUM.


Irresistible Vegetable Medley - pg 274
This recipe is pretty simple and delicious! I've made something quite like this before but in honor of my SkinnyTaste Cookbook, I decided to gussy this recipe up a little. I used purple cauliflower instead of regular cauliflower. Please note: purple cauliflower is genetically more like broccoli and has different nutritional value.


I also have tried a decent handful of the recipes located on the Skinnytaste blog. These are delicious, too. I find that the Skinnytaste blog is a great place to go when I'm out shopping and didn't meal plan. I just pick something tasty right from the blog.

I made this for my mother-in-law the last time she came to visit. OMG. Both of us LOVED this. But my MIL was in heaven.

Cilantro Lime Cauliflower "Rice"
This is delicious but hubby isn't a fan of cauliflower rice, lol. I haven't made this often.

Korean Beef Rice Bowls *loved*
Ok. This right here? This is my jam! I loved this one soooo much. I tried it with and without rice - it was great both ways. I also tried it with Quinoa and I liked it. I also tried it with sriracha and *OMG* divine.

Chicken Parmigiana Burgers
I made this recently but I substituted turkey for the chicken. Not the best idea, lol. It was ok. I spread garlic bread spread on the buns which was pretty delicious. But the turkey tasted strange with the other flavor profiles. I do plan to make this again. One day.

Shawarma-Spiced Grilled Chicken with Garlic Yogurt *loved*
OMG. This has such BIG flavor. HUGE flavor. And the garlic yogurt is strong, lol. Every time I opened my lunch bag the scent of garlic would smack me in the nose. But I really enjoyed it a lot. This is staying in the rotation.

Kenyan Braised Collard Greens and Ground Beef (Sukuma Wiki) *hated*
I was so surprised by how much [hubby and] I disliked this. We both like spicy/hot foods but there was something about this flavor profile that just didn't work. I'm not sure but I think the cinnamon is what bothered me. One of my co-workers is Kenyan and a fabulous cook. I keep meaning to ask him for his opinion on this one.


Make-Over Breakfast Sausage and Mushroom Strata
I liked this just fine. I would want more sausage for flavor, however. I do plan to try this again.

Crock Pot Chicken A La Criolla
I quite liked this. My mother-in-law liked this, too. Hubby was not a fan.



All in all, I love this book (and the blogs)! I'm so glad hubby got it for me and it will be getting a pretty good workout! ...more

If you're ready for a more gourmet Hungry Girl, this cookbook is for you! Skinnytaste lightens up meals in innovative ways like Chocolate Cream Pie (made with Tofu), Chocolate Walnut Cookies (made with avocado instead of butter), Chili Verde (made with chicken and white beans instead of pork) and Lasagna (made with zucchini instead of pasta).

I agree with the author's suggestion to make a weekly menu plan and then shop for the ingredients because most people won't have these types of items in If you're ready for a more gourmet Hungry Girl, this cookbook is for you! Most of the recipes have a lot of ingredients and will take more time than I have after coming home from work on weekdays. However, I'm looking forward to making several on the weekends. I just finished this, and immediately ordered it off Amazon. It's full of seriously approachable, delicious food. I usually steer clear of healthy cookbooks, because I can't keep up with the constantly changing trend of healthy ingredients that I often find out of my budget. I also often see a lack of animal protein and more vegetarian oriented recipes, and I am a big meat eater. This cookbook is actually written for a real person on a real budget. You don't have to make a stop to a specialty I just finished this, and immediately ordered it off Amazon. It's full of seriously approachable, delicious food. I usually steer clear of healthy cookbooks, because I can't keep up with the constantly changing trend of healthy ingredients that I often find out of my budget. I also often see a lack of animal protein and more vegetarian oriented recipes, and I am a big meat eater. This cookbook is actually written for a real person on a real budget. You don't have to make a stop to a specialty shop for every recipe, and I was so happy to see it's full of meat! I can't wait until it arrives and I can get started! The photos are beautiful and the instructions are so easy to follow. I believe my first dish will be the Sriracha Salmon. :) ...more

This is a fantastic cookbook! If you're looking for a cookbook with great food that are more healthy and low in calories, this may well be your best bet! Although I've heard of Gina's website, I haven't been spending a lot of time there regularly but I've decided to change that based on what I'm seeing in this cookbook!

The book itself is beautiful - well constructed, with great photography and lots of good tips! The content is well done and includes the following areas: Skinny Basics, Sunny This is a fantastic cookbook! If you're looking for a cookbook with great food that are more healthy and low in calories, this may well be your best bet! Although I've heard of Gina's website, I haven't been spending a lot of time there regularly but I've decided to change that based on what I'm seeing in this cookbook!

The book itself is beautiful - well constructed, with great photography and lots of good tips! The content is well done and includes the following areas: Skinny Basics, Sunny Mornings, Skinny-Licious Soups and Chilis, Sandwiches on the Lighter Side, Skinny Bites, Fabulous Main-Dish Salads, Perfect Poultry, Lean Meat Dishes, Fabulous Fish, Meatless Mains, Veggie-Licious Sides, Skinny Sweet Tooth.

There is something for everyone in this cookbook! Although most of the recipes have a photo associated with it, some of them don't which frustrates me since I'd prefer to have a photo for ALL of the recipes. But, I do appreciate that most of them have a photo.

Some of the recipes that I'm planning to try soon include - Winter Potato, Kale and Sausage Frittta, Rustic Italian Gnocchi Soup, Summer Lobster Rolls, Guiltless Sausage-Stuffed Mushrooms, Tuscan Panzanella Salad with Grilled Garlic Bread, Chicken Marsala, Slow Cooker Mexican Pork Carnitas, Cilantro-Lime Shrimp, Black Bean Burrito Bowls, Silky Chocolate Cream Pie, and Baked Bananas Foster a la Mode. Yum! I can't wait to dig in and make some of these dishes!

I highly recommend this cookbook for pretty much anyone! Definitely a great one!

Gina Homolka does the impossible: She takes delicious — but calorie-laden — dishes like Eggs Benedict, baked potato soup, Panzanella Salad, Chicken Parmesan, French silk pie, and much, much more and remakes them into low-cal recipes. Are the recipes always as scrumptious as the calorific originals? Not always, but they’re usually pretty good, and sometimes you really can’t tell that Homolka has shaved hundreds of calories off.

For those who favor the Paleo diet or any low-carb diets, The Gina Homolka does the impossible: She takes delicious — but calorie-laden — dishes like Eggs Benedict, baked potato soup, Panzanella Salad, Chicken Parmesan, French silk pie, and much, much more and remakes them into low-cal recipes. Are the recipes always as scrumptious as the calorific originals? Not always, but they’re usually pretty good, and sometimes you really can’t tell that Homolka has shaved hundreds of calories off.

This is a freaking awesome cookbook. I can see why so many people love it. Let's first start with the food. I have made two recipes out of the book already: The Easy Broccolini Flounder Bake and the Oven "Fried" Chicken. Both exceeded my expectations. The rest of the recipes look like they won't disappoint either.

Now for the nuts and bolts. The book is filled with gorgeous pictures of the recipes. Recipes are laid out easily with nutritional information, which is my personal favorite.

My boyfriend purchased this cookbook as a gift two Christmases ago, after I had talked about one of the recipes in passing conversation. I love Skinnytaste and it's on my list to purchase Gina Homolka's slow cooker recipe book! I highly recommend this cookbook for beginners that are looking for a lighter version of North American recipes with a dash of Colombian influence.

Gina's food philosophy is all about good portion control when it comes to eating seasonal, clean and whole foods that the My boyfriend purchased this cookbook as a gift two Christmases ago, after I had talked about one of the recipes in passing conversation. I love Skinnytaste and it's on my list to purchase Gina Homolka's slow cooker recipe book! I highly recommend this cookbook for beginners that are looking for a lighter version of North American recipes with a dash of Colombian influence.

Gina's food philosophy is all about good portion control when it comes to eating seasonal, clean and whole foods that the entire family can enjoy. What I like the most is that she puts the calories front and centre, and this stems from her connections with Weight Watchers. I've tried the majority of the recipes from each section (breakfast, meatless mains, sweets, salads, fish, soups and chilis) that I've wanted to try and can confidently say that everything has tasted amazing. A lot of the recipes are simple, as Gina promised, and a lot of them are lighter versions of dishes we are all familiar with. So, don't expect dishes you haven't heard of before - they should all be fairly recognizable!

Below is a partial list from memory of some of the recipes that me and my boyfriend love and have made on several occasions:

Chilled Carribean shrimp salad: The first time we made this we picked up ingredients at the local market so the flavour and taste was even more amazing.
Chicken enchilada soup: We went back for three servings the first time we made this in the slow cooker.
Chocolate walnut cookies: So delicious. I made a batch this weekend.
Melted buffalo melts: Remarkably easy but full of flavour.
Tumeric cauliflower
Hummus
Steak with Colombian Aji Picante: The recipe for Aji makes a huge portion, it was good, but it is super spicy.
French onion soup: Yummy but without the asiago cheese crisp, it can be a bit bland.
Winter frittata
Butternut squash lasagna roll: Loved it.
Lamb loin chop with yogurt sauce: Loved it.

I've mostly modified the salad recipes. For the Baja steak salad, I served it without the steak and had chopped up the Romain lettuce instead of leaving it in leaf form. The only thing I didn't love was the heavenly banana oats muffin recipe but I'm not sure if it's because I oversoaked the oats or if I don't like oats - it did not have a lot of flavour but I may try this again. Some recipes I got from her blog were not included such as the five-ingredient flourless chocolate cake that is honestly yummy!

I will be making the carrot risotto this weekend and plan to work my way through the rest of the salad dressings and sweets. Highly recommended. ...more

Love this cookbook! Easy to read recipes and beautiful photos (MUST HAVE for me!) Pressure cooker recipes are included. I can't wait to make some delicious meals. Can't wait to try the broccoli pasta! The acini de Pepe was the best new recipe I've made in many years.

This is a great cook book for my family. There are a lot of real, every day recipes I can use to make well rounded, healthy meals.

Tonight I made three recipes out of it but have book marked at least 10 more. This was a great investment.

I'm a big fan of the blog which bred this book, and this book takes a great formula with well written recipes into a lovely, glossy cookbook. Some great recipes presented in a much healthier way to traditionally created, and the vast majority are really straight forward. Well coded recipes help to quickly find what you are looking for. I've made plenty of the recipes from the site in the past and a handful from the book already with success.

This has some really yummy-looking recipes. I already prepare many of the Skinnytaste.com recipes and I'm sure these will be delicious. However, the best thing about the website recipes is that they have Weight Watchers point values listed for each recipe. Gina has left those out in this cookbook, presumably because Weight Watchers wouldn't give their blessing for her to publish or because Gina did not want this cookbook to focus on that. Of course, I can calculate the points based on the other This has some really yummy-looking recipes. I already prepare many of the Skinnytaste.com recipes and I'm sure these will be delicious. I have to say, I am a little disappointed in this cookbook. Don't get me wrong - it's a gorgeous book, lots of photos and healthy recipes. But they are recipes I doubt I will ever make. There are plenty of recipes that look delicious and that I think my daughter and I will enjoy, but I don't see myself spending that much effort on cooking. Yep, I'm lazy. I also work, go to grad school, take care of a house, husband, teenagers, and over a ton of animals. I'm tired!

There are a few recipes to fit a I have to say, I am a little disappointed in this cookbook. Don't get me wrong - it's a gorgeous book, lots of photos and healthy recipes. But they are recipes I doubt I will ever make. There are plenty of recipes that look delicious and that I think my daughter and I will enjoy, but I don't see myself spending that much effort on cooking. Yep, I'm lazy. I also work, go to grad school, take care of a house, husband, teenagers, and over a ton of animals. I'm tired!

There are a few recipes to fit a busy lifestyle of someone who doesn't enjoy being in a kitchen - Some muffins that can be made ahead and frozen and a western omelet muffin that looks pretty awesome. Homolka also has a lot of healthy living tips which add up to a change in lifestyle for someone like me. Maybe that's the trouble I have with this cookbook!

In short, if you love to spend time in the kitchen using lots of ingredients for a dish, this is the cookbook for you. If you are looking for quick and healthy meals, pass this one up. ...more

So many of you are probably noticing that I am doing cookbook reviews here now. There is a very good explanation of that: I absolutely LOVE cooking and trying new foods! I have so many cookbooks and recipes I have found over the internet that I have printed out and have tried. I also love tweaking them to suit my and my families taste, especially when I have a very picky 5 year old in the house. This coming year, I have actually decided to start eating more healthy and low and behold, I won a So many of you are probably noticing that I am doing cookbook reviews here now. There is a very good explanation of that: I absolutely LOVE cooking and trying new foods! I have so many cookbooks and recipes I have found over the internet that I have printed out and have tried. I also love tweaking them to suit my and my families taste, especially when I have a very picky 5 year old in the house. This coming year, I have actually decided to start eating more healthy and low and behold, I won a silent auction at my daughter's school for a 3 month gym membership, so I will be cashing in on that come the new year plus eating more healthy. Win Win!

The Skinnytaste Cookbook has so many wonderful recipes in it, and guess what? You can't even tell they are healthy for you. I'm serious! Well some of them you can, but the majority of them you can't. We recently tried the Too-Good-to-Be-True Baked Potato Soup (my fiance and I love soup) and it was amazing! A lot of flavor and get this, it has cauliflower in it. Yep. And the only way that I usually eat my cauliflower is swimming in ranch or in a broccoli salad, where the broccoli dominates the cauliflower. I can't wait to try out the rest of the recipes!

This cookbook is a must have in every kitchen. It’s filled with recipes that are healthy, and will please just about anyone’s taste. It has recipes we all love, but in new, innovative ways to lighten the dishes, keep it healthy, and enjoy it. In the beginning of the cookbook, there is a Recipe Key to find throughout the book for vegetarian, gluten-free, freezer friendly, quick meals in less than 30 minutes, and slow cooker recipes. Included in the introduction is basically explaining how this This cookbook is a must have in every kitchen. It’s filled with recipes that are healthy, and will please just about anyone’s taste. It has recipes we all love, but in new, innovative ways to lighten the dishes, keep it healthy, and enjoy it. In the beginning of the cookbook, there is a Recipe Key to find throughout the book for vegetarian, gluten-free, freezer friendly, quick meals in less than 30 minutes, and slow cooker recipes. Included in the introduction is basically explaining how this cookbook is about to change all and make cooking easy, affordable, and enjoyable for everyone involved. The Skinny Basics follows, explaining the key to affordable, healthy eating is planning meals ahead of time with a shopping list, and buying just what you need to make those meals at the grocery store. Even dumping the junk (processed foods) and taking the time and effort that goes into cooking. That it is important to make calories count with healthy fats, lean proteins, and high fiber carbohydrates.

The section Kitchen Makeover is one of my favorites, because it goes into detail on what to get rid of in the kitchen, such as disposing of store bought dressings, giving up nondairy creamers, and keeping it real with the main importance: health before weight. It is finished off with freezer and pantry tips that we all could use when it comes to cooking in the kitchen, meal preparing, and planning ahead.

Not only is this cookbook filled with delicious recipes that are lightened up and healthy, but there are nutritional information for each recipe, such as serving size, per serving of calories, fat, fiber, etc. I found the Skinny Scoop, which could be found throughout the book, to be extremely helpful. It had informative tips and advice on the dish, such as freezing leftovers in labeled portion sized containers for quick go-to’s when there isn’t time to cook.

It had Food Facts throughout as well, with health benefits, research, and info from studies. There is even little notes for Perfect Pairings, such as chili toppers, or alternative ingredients. I found it vital that in the beginning, there was a section for staying motivated with surrounding yourself with people who inspire you, think small when it comes to weight lose because every pound lost is closer to your goal, and just really vital reminders that come along with changing up one’s lifestyle to be health and smart when it comes to choices and food in the kitchen.

Overall, I thoroughly enjoyed this cookbook, and I recommend it to anyone who is looking for a healthy alternative to create those dishes that are scrumptious, but entirely homemade.

Cookbook club enjoyed it. One of my absolute go-'tos for dinners. Every time, I find something new but shrimp and grits is one of our all time favorites.

I didn’t realize I’d never reviewed this cookbook! After making another delicious recipe from it tonight, I decided it was about time. The recipes here are easy to make and although they’re health-conscious, they’re extremely flavorful. I also love that each recipe includes information about sodium content, which is important for a lot more readers than you might think. I don’t know why I haven’t picked up Gina’s other books, but I will now!
